Rhubarb Strawberry Cobbler
A sweet and tangy cobbler perfect for a July 4th gathering!
INGREDIENTS:
1 1/4 cup Sugar
3 tbs Flour, all purpose
1 1/2 tsp Cinnamon
1 1/2 tsp Orange rind
6 cup Rhubarb, coarsely chopped
3 cup Strawberries, sliced
1 1/2 cup Flour, all purpose
3 tbs Sugar
1 1/2 tsp Baking powder
1/2 tsp Baking soda
1/4 tsp Salt
3 tbs Margarine, chilled
1 cup Buttermilk
DIRECTIONS:
1. In large bowl, combine the first four ingredients. Add rhubarb and strawberries. Toss well.
2. Spread mixture in 13 x 9 baking dish. Bake in 400 degree oven 10 minutes.
3. In large bowl, combine the remaning flour, remaining sugar, baking powder, baking soda and salt.
4. Using fingers or two knives, cut in margarine until mixture resembles small peas.
5. With fork, stir in buttermilk just until soft dough forms.
6. Drop by spoonfulls on top of hot fruit filling. Bake 25 minutes or until topping is golden brown and has risen.
