Romans Pants

I named this recipe Romans Pants for two reasons. The first is because I put this together pretty much by the seat of my pants when we were running late for a concert and needed a quick dinner. The bonus of this recipe, is that it can very easily be taken along with you to eat “on the way.”

The other reason for the name is that, although the tastes are quite different, it reminds me of a classic ethnic phenomena called “Saint Joseph’s Pants,” a sort of pastry that is usually served on the feast of Saint Joseph in the Romans Catholic faith.

This recipe makes 8 pants.

INGREDIENTS:

  • 1 package of Pilsbury Ready-Made Pie crusts
  • 1 12-ounce can of canned white meat chicken
  • 4 tablespoons of water-chestnuts, drained and diced (about, but not quite a can)
  • 1-1/2 tablespoons of diced onion (chop a whole onion and freeze what you don’t use for later recipes).
  • 5 tablespoons of mayonnaise
  • 5 tablespoons of sour cream (if you want a drier filling, reduce both the mayo and the sour cream by 1 tablespoon)
  • 1/2 teaspoon of salt

DIRECTIONS:

  1. Remove the pie crusts from the refrigerator and allow them to warm up at room temperature for about 10 minutes.
  2. In a large bowl, combine all of the ingredients with the exception of the pie crusts.
  3. Using a pizza cutter or a sharp knife, divide each pie crust dough into four equal pieces, giving you eight pieces of triangle-shaped dough in total.
  4. Spoon equal amounts of filling into each crust.
  5. Fold the largest corner of the dough toward the longest side (across from it) and press shut. Fold the other two corners in toward the front. Press shut to seal in the filling. Your little packages will sort of look like those cloth diapers or rubber baby pants; at least to me they do.
  6. Bake at 350 for about 25 minutes or until the crust is just starting to get a little golden. Serve hot.
