Salad Dressing Recipes

When a packaged product is very convenient to buy rather than make from scratch, plus often less expensive and tasty to boot, such as salad dressing, I’m the first one in line to purchase it. I should buy stock in the company that makes my favorite low-fat raspberry-pecan vinaigrette. Plus, commercial dressings last longer in the refrigerator if they’ve got preservatives in them.

So why make dressing from scratch? Because there are a few good recipes that are so yummy that they are worth the effort. These are my favorites, and I haven’t been able to find their commercial counterparts that taste as good.

These would be an especially nice touch for a salad bar on Mother’s Day (see my blog in Family Fun here).

Cucumber Dill Dressing

1 cucumber, peeled, seeded and finely chopped

1 cup plain yogurt

1/4 teaspoon garlic salt

1/8 teaspoon salt

3/4 teaspoon dill weed

1 teaspoon Dijon mustard

Stir the ingredients together well. Chill before serving.

Creamy Raspberry Dressing

1/2 cup raspberries

1 cup plain yogurt

1 Tablespoon red wine vinegar

2 teaspoons honey or sugar

Put all the ingredients in a blender and blend until smooth. Chill before serving.

Stacy’s Tex-Mex Dressing

1/2 cup olive oil

1/4 cup rice wine vinegar

1 teaspoon mustard powder

1/2 teaspoon oregano

1/8 teaspoon pepper

1/4 teaspoon cilantro

1/4 teaspoon garlic powder

1/4 teaspoon cumin

Put everything into a jar with a lid with a tight seal. Shake until thoroughly blended. Chill. Shake before pouring on salad.

Asian Salad Dressing

1/4 cup soy sauce

1/8 cup fresh lemon juice

1 clove garlic, minced

2 Tablespoons freshly grated ginger

1 teaspoon Dijon mustard

2 teaspoons honey

1/8 teaspoon pepper

1 cup olive oil

Put everything into a jar with a lid with a tight seal. Shake until thoroughly blended. Chill. Shake before pouring on salad.

Cilantro-Lime Vinaigrette

1/2 cup olive oil

1/8 cup plain yogurt

1/8 cup fresh lime juice (or lemon juice)

2 Tablespoons rice wine vinegar

1/4 cup chopped cilantro

1/4 teaspoon pepper

1/4 teaspoon thyme

Put all the ingredients into a blender and blend until smooth. Chill before serving.
