Are you throwing a big bash for your graduate? These salads are unique and have just the right amount of sophistication for your many guests that will come through your house wishing the graduate well. One nice thing about featuring salads at a graduation party is you can quickly pair them with some finger sandwiches or order pizza, a graduation cake of course, and then you’re done with the meal! Best of all, this can all be done in advance!
Cucumber and Bleu Cheese Salad
This salad has a hint of Mediterranean flavor. Although it’s not your typical green salad, I can guarantee that there won’t be any leftovers at the end of the night.
You will need:
1 cucumber, cubed
1 tomato, cubed
3 stalks celery, cubed
1 (3.25 ounce) can sliced black olives, drained
1/4 cup crumbled blue cheese
1/2 cup red wine vinegar
Directions:
Put all ingredients in a mixing bowl, pour in the red wine vinegar and you’re done! I usually add freshly ground sea salt, and freshly ground pepper.
Bacon and Macaroni Salad
A little longer on the prep but again, this salad can be made in advance making the day of your graduation party a breeze.
You will need:
1 pound sliced bacon, cooked and crumbled
1 package elbow macaroni, cooked and drained
1 cup mayonnaise
1/2 cup sour cream
2 tablespoons prepared yellow mustard
1/4 cup white sugar
1/4 cup cider vinegar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 tomatoes, seeded and chopped
1 large cucumber, peeled and chopped
4 hard-cooked eggs, chopped
1/2 cup chopped celery
1/2 cup sliced green olives
Directions:
Whisk the mayonnaise, sour cream, mustard, sugar, vinegar, salt, and pepper in a large bowl until the sugar has dissolved. Add the cooked bacon, drained and rinsed pasta, tomato, cucumber, egg, and celery. Gently fold until the salad is evenly covered with the dressing. Sprinkle with the sliced olives to serve.
