Seafood Dip

I love dips. They’re perfect when company comes, or for lounging in front of the television for a Lifetime TV marathon or even a football game. Dips are hearty, too, which means they’ll satisfy even the heartiest of appetites. And best of all—even a novice cook or someone who isn’t exactly a master of the kitchen can whip up dips in a snap.

This dish is a must-try for seafood lovers. The flavors of the shrimp and the crabmeat merry perfectly, resulting in a creamy, cheesy, rich dip you can be proud to serve your friends and family…and yourself. And if you love seafood but aren’t crazy about shrimp or crab, go ahead and experiment with your favorite ingredients.

For this recipe you’ll need:

1 cupful of shrimp, coarsely chopped

1 cup claw crab meat (may also use lump crab meat)

½ can Cream of Shrimp soup (use the bottom half—that’s where the shrimp are!)

½ tsp. ground white pepper

1 cup mayonnaise

Pinch of salt

2 cups grated Parmesan cheese

To make:

Preheat oven to 325 degrees.

In a large bowl, combine the shrimp, crab meat, Cream of Shrimp soup, white pepper, mayonnaise, salt, and Parmesan cheese. Set aside.

Add 2 TB butter to a skillet

Sautee 2 ribs celery, 1 green pepper, and 1 onion until tender. Add to the dip. Pour into a pre-sprayed casserole dish and cook at 325 degrees for 25 minutes, until it’s bubbly and brown.

Serve with crackers or, even better, toasted baguette slices or bagel chips.

Tips: You can use any kind of crab meat you can find in the seafood section of your grocery store.

If you can’t find Cream of Shrimp soup, you can substitute Cream of Chicken soup instead. Just use half the can as directed above.
