What do you typically eat on a Saturday night? For some home cooks the weekends allow more time to experiment with new recipes. If you usually eat hamburgers on Saturday, why not mix it up by preparing seafood dishes? Or, try a new pork recipe instead of making the same ol’ boring lasagna.
If you choose to go with the former, consider trying some of my grandfather’s famous shrimp recipes. They are super simple (which allows you more time to relax with family and friends) and healthy too.
SPICY GRILLED SHRIMP
Ingredients:
Frozen shrimp, thawed
Butter, 2 tablespoons melted
Butter, 4 tablespoons whipped
Lemon Wedges
Salt
Pepper
Old Bay Seasoning
2-3 Cloves of garlic, chopped
Onion Powder
Skewers
Directions:
Thaw frozen shrimp.
Place shrimp on a flat surface with tails facing the same direction. Run skewer through each shrimp, ensuring they are as flat as possible and lightly separated.
Once all shrimp are skewered, season the shrimp evenly with salt and pepper or Old Bay seasoning.
Place 1 tablespoon of melted butter over grill non-stick pan. Place skewered shrimp on pan. Cook for about 2 minutes. Using tongs, turn shrimp over.
Spread flavored butter (see recipes below) over each skewer. Cook for another two minutes or until shrimp are done.
Place skewered shrimp on a serving platter or individual plate and serve with a lemon wedge and melted compound butter for dipping.
FLAVORED BUTTER
Lemon Pepper Butter: Combine 2 tablespoons whipped butter with fresh lemon juice, black pepper.
Garlic Butter: Combine 2 tablespoons whipped butter with onion powder and chopped garlic.
BACON WRAPPED SHRIMP
Ingredients:
5 tablespoons olive oil
6 to 7 fresh basil leaves, julienned
1 tablespoon pine nuts, finely chopped
Juice of 1/2 lime
Pinch of finely cracked white pepper
4 shrimp, peeled and cleaned with tails left intact
4 slices bacon
Directions:
Mix olive oil, basil, pine nuts, lime juice and pepper in a bowl. Add shrimp and marinate 2 to 3 minutes.
Wrap bacon slice around each shrimp. Skewer shrimp on a wooden stick.
Saute or broil on medium heat until cooked.
Serves 1.
