My 6-year-old is counting down the days to her first grade class Valentine’s Day party. She’s dying to pass out the all-red treats she chose for all of her classmates and hand her teacher the all-red Love Day card she made with a very red Sharpie. It’s all about red during the countdown to February 14th. Thank goodness her Catholic School uniform is partially red or I’d really be in for it.
You’d think the class party would be enough to satisfy my daughter’s obsession with red, but nooooooo, she wants to paint her entire day red, including her meals. Since the school is planning a red-themed lunch my daughter thinks it’s only right that I join in the “fun” and make a red breakfast and dinner. Her suggestions: Heart-shaped pancakes with strawberry jam and fruit punch for the former and hot dogs with ketchup for the latter.
Ugh!
I haven’t decided on the final Love Day menu, but I did find a couple of red contenders for dessert:
Valentine’s Day JELLO Salad
Ingredients:
6 ounces (2 boxes) strawberry or cherry JELLO
4 ounces Red Hots cinnamoin candy
3 cups boiling water
2 cups of applesauce
Directions:
Dissolve JELLO and Red Hots in boiling water.
Set aside and let cool until it gets to room temperature.
When it is cooled, add the applesauce.
Pour mixture into a greased 8 cup JELLO mold.
Chill until firm before serving.
Mini Red Velvet Cupcakes
Ingredients:
2 1/2 cups flour
1 1/2 cups sugar
3 tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1 1/3 melted butter
3/4 cup buttermilk
2 tablespoons food color
1 tablespoon vinegar
1 tablespoon vanilla
Directions:
Preheat oven to 350 degrees.
Mix dry ingredients.
In a large bowl mix butter and eggs.
Whisk together remaining wet ingredients.
Starting with dry ingredients mix half into butter mixture, then mix half buttermilk mixture. Repeat and then pour into greased muffin tins.
Bake for 20 minutes of until toothpick comes out clean.
Cream Cheese Icing
Ingredients:
8 ounces cream cheese
8 ounces powered sugar
1 tablespoon vanilla
Directions:
Beat ingredients together until smooth.
Spread icing over cooled cupcakes.
