Shaped Cakes

Somehow I have become the cake lady. I usually bake all the kids first birthday cakes and many of the ones after that. This weekend was my great nephews first birthday and I wanted his cake to be special.

I decided to do the word ONE, how hard can that be? I baked the cakes and cut out the letters and then the trouble began. The cakes were very flimsy and feel apart, not to mention almost impossible to frost with all those cut edges and crumbs. So I mushed it all together, made huge cake pops and shaped them into letters.

To do this you will need about double the cake you would ordinarily use, once you add something to bind it together the cake is very dense and moist, but it takes a lot more cake to make the same size letter.

I used one 9×13 sheet cake for each letter. I baked the cakes, let them cool and then crumpled each one up into three separate bowls. I wanted a different flavor for each cake so the first one I mixed with peanut butter, the second one I used frosting and for the third, cream cheese.

I don’t know the measurement for the add ins, just keep adding it until all the cake is moist and will stick together.

After it’s well mixed shape each one into a letter. Smooth the top and sides and then freeze the whole thing. Freezing makes it much easier to frost. The frosting will spread really well and you can even get it smooth so it looks almost like fondant.

After frosting I got out my cake decorating tips, filled Ziploc bags with frosting and added some decorations.

The cakes were a hit, everyone said they were delicious. If you need to make a shaped cake for someone, or just want to impress the family this is the easiest way I know to shape cakes.
