Shopping List and Tidbits for April 24 to April 28

In case you’re new to the food blog, each week instead of doing a week in review, I have created a shopping list and listed the interesting food related items that I blogged on. This way, you can catch up on your reading, as well as print the blog and use it as a shopping list for your favorite recipes. I admit that I’m experimenting with formats and so any feedback is appreciated!

Last week, I was so heavy on the tidbits, and low on the recipes that this week I decided to do lots of recipes. The food news is so overshadowed by issues in our food supply (which I’m avoiding blogging about) that there weren’t any good tidbits to share. With that said. . .

Shopping List

Chicken Enchilada Bake A yummy casserole dish that’s easy to prepare in the morning and stick in the oven at dinner!

3 bonless, skinless chicken breasts

1 package of large flour tortillas

1 can of condensed cream of mushroom soup

1 can enchilada sauce

9 ounces of evaporated milk

1 green pepper

1 small onion

Shredded Monterrey or Pepper Jack cheese

Homemade Italian Vegetable Hamburger Casserole Our family’s healthier version of a hamburger helper dinner!

1.5 pounds of hamburger (this is optional if you’d prefer a vegetarian dish)

Corkscrew, rotini, or bow tie pasta

3 green zuchini

1 small onion

Fresh mushrooms

2 jars of marinara sauce

Pasta Primavera with Shrimp A yummy shrimp and pasta dish!

1 pound of linguine

1 pound uncooked shrimp (peeled and deveined)

2 cups fresh broccoli, chopped

1 cup sliced fresh carrots

1 cup fresh green beans; cut into 2 inch pieces

1 medium zuchini

1 medium sweet red pepper, julienned

2 tbsp all-purpose flour

1 1/4 cups heavy whipping cream

3/4 cup chicken broth

1/4 cup grated Parmesan cheese

3/4 teaspoon of salt

1/2 teaspoon of pepper

Stuffed Hamburgers This is a great recipe to get creative with!

One package of lipton onion soup mix

One egg

Milk

Pumpkin Oatmeal This is a sneaky mama favorite

2 cups quick or old-fashioned oats

3 cups milk

1/2 cup canned pumpkin

1/4 tsp pumpkin pie spice

1/8 tsp cinnamon

1/4 tsp allspice

Spiced Chai Good cold or hot!

3 cups rice milk, plain or vanilla flavored

3 cups water

1/3 cup brown sugar or granulated sugar

2 tablespoons black tea leaves

1 two-inch or longer cinnamon stick

1 small ginger root peeled and finely diced

2 whole cloves

4 cardamom seeds

8 whole black peppercorns

2 whole allspice

1/8 teaspoon ground nutmeg
