Are you getting to the stage where you’re sick of looking at turkey and chicken? Here’s a recipe that will pique the taste buds and add some variety. It’s also a dead easy recipe that won’t keep you tied to the kitchen for ages making it, which is another advantage. And you guessed it – both gluten free.
Piquant Chicken or Turkey
Ingredients
2 pounds cooked chicken or turkey cut into small pieces
3 ounces margarine
4 ounces plain gluten free flour
Salt and cayenne pepper to taste
1 pint milk
Half a pint gluten free chicken stock
Juice of half a lime
2 sliced gherkins
3 tablespoons gluten free mayonnaise
1 beaten egg
Three quarters cup grated light tasty cheese
1 cup rice crumbs tossed in 2 tablespoons melted margarine
4 ounces slivered almonds browned in margarine
Method
Melt margarine. Add flour, salt and cayenne. Cook for 1 minute. Add stock and milk. Stir constantly till it boils and thickens. Add gherkins, lime juice, beaten egg, mayonnaise, cheese and chicken.
Pour into greased casserole dish. Top with rice crumbs which have been tossed in melted margarine.
Place in moderate oven to heat through and to brown the rice crumbs. Sprinkle each serving with browned slivered almonds.

Pineapple Chicken
Ingredients
2 cups cooked chicken
1 packet gluten free chicken soup
2 cups water
1 large clove garlic
1 onion
1 15 ounce can pineapple pieces
1 green capsicum
2 tablespoons canola oil
2 tablespoons tamari soy sauce
Toasted slivered almonds to top if desired
Method
Combine packet soup with water. Sauté chopped capsicum with crushed garlic till soft. Blend pineapple juice into soup mix. Add tamari sauce, chicken, capsicum and half pineapple pieces. Heat stirring occasionally. Serve over boiled rice and garnish with remaining pineapple and toasted almonds.
