I do not know if I am the only one that runs into this problem, but I become stuck on serving the same side dishes. I can put a roast in the crock-pot, cook pork chops on my George Foreman, or grill steaks outside, but I always seem stuck on the same old side dishes. There is no creativity for me – corn, mashed potatoes, peas, and broccoli. I get so tired of the same old thing over and over again.
So today, I went on the search for side dish recipes. I did not want anything too complicated or fancy, just something different. I found these and plan to try them this week!
Zesty Hominy and Cheese
For this recipe, you will need three cans of white hominy, sour cream, shredded cheddar cheese, a can of chopped green chili peppers, and cayenne pepper.
Preheat your oven to 350 degrees. In a bowl, mix the three cans of hominy (drained), one 8-ounce container of sour cream, 2 cups of shredded cheddar cheese, one four-ounce can on chopped green chili peppers, and a pinch of cayenne pepper. Mix well then transfer to a 2-quart casserole dish. Bake in the oven for 25 minutes. I love hominy and think this would go great with pork chops!
Awesome Broccoli Casserole
For this recipe, you will need two 10-ounce packages of frozen chopped broccoli, one can of whole kernel corn, one large onion, sour cream, one can of condensed broccoli soup, shredded cheddar cheese, herb-seasoned dry bread stuffing mix, and butter.
Dice your onion and lay your broccoli out to thaw. Melt 1/4 cup of butter in the microwave. Preheat your oven to 350 degrees. Mix the two packages of broccoli, the can of corn, and the diced onion in a large bowl. Stir in the whole container of sour cream, the can of broccoli soup, and 1/4 cup of the shredded cheddar cheese. In a separate bowl, combine the package of stuffing mix and the 1/4 cup of melted butter.
Place the broccoli mixture in a 2-quart casserole dish then cover it with the stuffing mixture. Bake the casserole in the oven for 30 minutes. Remove and add the other 1/4 cup of shredded cheddar cheese then return to the oven for an additional 5 – 10 minutes.
