Simple Game Day Party Recipes

I just got an email from Noodles & Company offering me a free bowl of my favorite noodles if I show up to the restaurant decked out in Green Bay Packers paraphernalia. Nice… except I don’t own any Packers gear.

Noodles & Company’s special NFL playoff promotion is clever, but since I don’t have any green and gold outfits, I guess I be making my own party dishes for the big weekend wild-card games, such as:

VEGETARIAN STUFFED MUSHROOMS

Ingredients:

1 pound mushrooms, cleaned and stems removed

1 package (10 ounces) frozen chopped spinach

1/2 cup seasoned bread crumbs

2 green onions, minced

1 egg, slightly beaten

1/4 cup butter

1/4 cup grated Parmesan cheese

Salt, to taste

Black pepper, to taste

Garlic powder, to taste

Directions:

Preheat oven to 350 degrees.

Cook spinach according to package directions; drain well. Mix with remaining ingredients.

Stuff mushrooms with spinach mixture and bake 15 minutes.

SPICY CORN SALSA

Ingredients:

2 cans (12 ounces each) corn, drained

1 small red onion, diced

1 red pepper, seeded and diced

1 large cucumber, seeded and diced

Squeeze of lime

Directions:

Mix together all ingredients. Chill overnight.

Serve with tortilla chips.

HOMEMADE PIZZA BAKE

Ingredients:

1 1/2 pounds ground beef

1 cup onion, diced

1 tablespoon garlic salt

1/2 teaspoon black pepper

1 can (28-ounce size) crushed tomatoes

1 32-ounce jar spaghetti sauce

2 teaspoons Italian seasoning

1 12 oz. box Rotini, cooked

4 cups shredded mozzarella cheese

2 cups total of your favorite pizza toppings (pepperoni, sausage, mushrooms, diced green pepper, black olives etc.)

1/2 cup grated Parmesan cheese

Directions:

Preheat oven to 350 degrees.

Brown beef with onion. Season with garlic salt and pepper. Drain grease. Stir in tomatoes (with liquid), spaghetti sauce, and Italian seasoning. Break up tomatoes with a fork. Bring mixture to a boil, and then reduce heat. Simmer uncovered, stirring occasionally for 5 to 10 minutes.

Spoon pasta in a greased 9 by 13-inch pan.

Top with mozzarella cheese, then sprinkle on your favorite pizza toppings.

Sprinkle Parmesan cheese on top of pizza toppings.

Bake for about 35 minutes until brown and bubbly.

Serve with salad and bread.
