Sizzlin New Orleans Skillet
A taste of New Orleans in your kitchen! This is also a fanastic way to use up leftovers. You can add almost anything you have to this skillet meal.

INGREDIENTS:
1 tsp vegetable oil
1/2 medium onion, chopped
1/2 stalk celery
1/2 medium red bell pepper, chopped
1/2 medium green bell pepper, chopped
1/2 medium zucchini, sliced into rounds
1 tsp green chile peppers, finely chopped
1 tbs butter
1/2 cup all-purpose flour
1 tsp salt
1 pinch black pepper
1 packet dry onion soup mix
2 1/2 cups water
1 pinch cayenne pepper
1 pinch crushed red pepper flakes
2 large boneless skinless chicken breasts, cut into bite-size pieces
1/2 lb kielbasa sausage, sliced
1/2 lb shrimp

DIRECTIONS:
1. Heat oil in a large heavy skillet over medium heat. Saute onion, celery, red bell pepper, green bell pepper, zucchini, and green chiles until the onion is tender.
2. Remove vegetables from skillet, and set aside.
3. Melt the butter in the same skillet on medium heat, being careful not to burn. Stir in flour until combined, then stir in salt and pepper. Cook flour mixture until brown, 3 to 5 minutes; stirrin continuously.
4. Stir in onion soup mix and water. Increase heat to medium high.
5. Season with red cayenne pepper and crushed red pepper flakes. Stir in vegetables.
6. Reduce heat to low.
7. Heat a separate large heavy skillet over medium high heat. Saute chicken, sausage and shrimp until chicken is no longer pink, and juices run clear.
8. Stir meat and shrimp into vegetable mixture. Simmer for 35 minutes.

Cook: 45 minutes
