Sizzling Steak Tacos with Mango Salsa

How often do you prepare steak for a weekday dinner? In a previous blog I revealed that making steak in the middle of the week is not a common occurrence in my home. But, during the summer months it’s not uncommon for some home cooks to throw a few steaks on the grill mid-week. If you are one of these lucky folks then you might consider making the following recipe.

These Sizzling Steak Tacos are hot and spicy thanks to some ground cumin and garlic. The simple ingredients give the steak a welcome kick. Meanwhile, the fresh mango salsa has its own unique vibe going on with the addition of some poblano peppers. The salsa is a refreshing accompaniment to the steak and the recipe can easily be doubled if you plan to serve it at a party. Another bonus with this dish is that clean up is a breeze.

SIZZLING STEAK TACOS WITH FRESH MANGO SALSA

Ingredients:

1 pound top sirloin steak, cut 3/4-inch thick

2 medium poblano peppers

1 medium onion, cut into 1/2-inch thick slices

2 cloves garlic, minced

1 teaspoon ground cumin

1 medium mango, diced

1/4 cup chopped fresh cilantro

1/4 cup fresh lime juice

1/4 teaspoon salt

8 small corn tortillas (6 to 7-inch diameter)

Fresh cilantro sprigs

Lime wedges

Directions:

Place peppers and onion slices over medium heat on preheated gas grill.

Grill, covered, 15 to 20 minutes or until onion is tender and pepper skins are blackened, turning occasionally. Place peppers in Ziploc bag and close. Set peppers and onion aside.

Combine garlic and cumin; press evenly onto steaks.

Place steaks on grill. Cook on covered grill for 13 to 16 minutes (charcoal) or 8 to 13 minutes on covered preheated gas grill, turning occasionally.

Remove steaks from grill and keep warm.

Remove and discard skins, stems and seeds from peppers.
Chop peppers and onion. Combine chopped vegetables, mango, chopped cilantro, lime juice and salt in medium bowl. Mix well and set aside.

Place tortillas on grill and warm for 30 seconds on each side or until lightly browned.

Slice steak. Season with additional salt if desired.
Top tortillas with equal amounts of steak and mango salsa.

Garnish with cilantro sprigs and lime wedges, if desired.

Makes 4 servings.
