Skewer Your Meat

Our barbecue gets plenty of use for cooking roasts as well as barbecuing. These recipes both go well on skewers on the barbecue, though you could also put them under the griller if you prefer. Although they take a bit of marinating time, you could be doing other things while they are marinating. Set a timer to remind you when they are ready. The advantage is they don’t take long to cook.

HINT

Although I have used beef in these two recipes you could just as easily use lamb or even chicken if you prefer.

Spicy Beef Kebabs

Ingredients

I Spanish onion

2 tablespoons coconut milk

2 teaspoons red curry paste

1 tablespoon fish sauce

1 teaspoon raw sugar

16 ounces beef

Method

Slice beef into thin slices. Marinate beef in a mixture made up of the curry paste, coconut milk, fish sauce and sugar. Marinate for at least 30 minutes. Longer if time allows.

Thread the meat onto skewers.

Barbecue or grill the skewers on a low heat till cook through. Drizzle any remaining coconut and curry mix over the beef while cooking.

Serve hot with rice and a salad with sweet chili sauce.

Skewered Beef

16 ounces grilling steak

Third cup peanut oil

Third cup Tamari sauce

1-2 cloves garlic

1 Spanish onion, chopped

3 tablespoons sesame seeds

2 teaspoons ground cumin

2 teaspoons lemon juice

Method

Cut beef into one inch cubes. Place beef in a bowl.

Add soy sauce, peanut oil, onion, garlic, and sesame seeds. Marinate beef in this mixture for 3 hours.

Drain marinade from meat. Thread meat onto skewers. Brush with lemon juice and cumin. Barbecue or grill on low heat, turning frequently. Throughout the cooking baste with marinade at regular intervals.

Cook till beef is tender.

Serve with rice and salad or vegetables. Middle Eastern Rice would go particularly well with this or if your family is not enamored of rice, you could use my favorite potatoes.
