This is not really pizza. That’s exactly what my kids told me. They said it was delicious but it was clearly not pizza and to call it pizza is a misnomer. (Gotta love those home schooled six year olds that use words like ‘misnomer.’) However to call it “Ground Beef Mixture On Top of Finely Shredded Potatoes” is a little cumbersome. So whatever you want to call it, this recipe is great because it doesn’t take long to prepare. Granted shredding the potatoes takes awhile. However, if you shred the potatoes ahead of time, this is easily on the table in 30 minutes. I actually shredded fresh potatoes, but I imagine that you could use thawed frozen hash browns as well.
You will need:
1 pound ground beef
½ medium onion, finely chopped
½ green pepper, diced
1 ½ teaspoons of salt
½ teaspoon of pepper
2 tablespoons of butter
6 medium potatoes peeled and finely chopped.
3 eggs, beaten
1/3 cup milk
2 cups of shredded cheddar cheese (or really, any variety you prefer)
Directions:
In a skillet over medium heat, brown beef with the onion, green pepper and a little salt and pepper. Remove meat mixture from skill and drain the fat. Reduce heat to low. Melt butter and spread the potatoes evenly over the butter. Salt and pepper to taste. Top with beef mixture. Combine eggs and milk; pour over all. Cook, covered, until potatoes are tender (about 20 to 30 minutes). Top with cheese and cover and heat until the cheese is melted, about another 5 minutes.
This actually comes out like ‘pizza’ (despite what my children say) in the sense that you can cut it and serve slices!
Kids’ Hint: Kids can peel the potatoes! While peeling potatoes ranks low on my list of fun kitchen activities, kids love it. If they are shown how to properly use the vegetable peeler, there is very little risk of getting cut. My four year old is our official vegetable peeler.
