“Skinny Mini” Pigs in a Blanket

Hi everyone—it’s Mary Anne, the Weight Loss Blogger. As you can imagine, after a year of dieting, I’ve got a few (million) yummie low cal recipes at my fingertips and I thought I could throw some out on the Food Blog for everyone to enjoy.

As Libby previously mentioned, the Super Bowl is right around the corner—but what’s a dieter to do when you head to your Super Bowl party only to be engulfed in a swarm of chili con queso, beanie weenies, chips, dips and the like? Well, you might want to check out the Weight Loss Blog for some helpful hints…but as for the Food Blog, an easy low calorie Super Bowl recipe… the “Skinny Mini” Pigs in a Blanket!

“Skinny Mini” Pigs in a Blanket

Ingredients:
2 ½ cups reduced-fat all-purpose baking mix
¾ cup low-fat (1%) skim milk
8 reduced fat chicken or turkey hot dogs, cut in half

Directions:
1. Preheat the oven to 450 degrees. Spray a baking sheet with non-stick spray.

2. Combine the baking mix and milk in a bowl until a soft dough forms. Turn onto a surface lightly sprinkled with baking mix, Knead 10 times.

3. Roll the dough into an 8 x 12 inch rectangle. Cut the dough into 8 squares. Cut each square in half to form 2 triangles. Starting from the narrow end, wrap each triangle around a hot dog half. Place on the baking sheet.

4. Bake until golden and browned, about 10 minutes. Serve hot.

You may serve these little dogs with some spicy, no-points mustard..delish!
