Smoked Sausage and Potato Soup
1 pound cooked smoked beef sausage, sliced thin
5-ounce package cheese scalloped potatoes
2 cups of frozen mixed vegetables, thawed
14 1/2-ounce can of onion-flavored beef broth
1 cup of water
2 cups milk
2 tablespoons fresh parsley, chopped
1/4 teaspoon pepper

In a hot Dutch oven, add the sausage, coking and stirring five minutes until browned. Drain off fat. Add potatoes only from package, mixed vegetables, broth, and water, bringing to a boil. Reduce heat and whisk in cheese from potato package until blended. Cover and simmer on low, about 12 minutes while stirring occasionally. Stir in the milk, cooking while uncovered. Remove from heat and stir in parsley and pepper. Serve hot.
