Snow Day Fun With Stained Glass JELL-O

There are snowy days, and then there are SNOWY days. The latter is what we’re dealing with today. Many portions of my state are incapacitated due to the Blizzard of 2009. Sixteen inches of snow, hurricane force winds, mass power outages and bitterly cold temperatures, forced the governor of Wisconsin to declare a State of Emergency for all 72 counties.

Needless to say, we haven’t left our home all day… and now cabin fever is setting in. My kindergartener was beyond thrilled when she first learned that school had been cancelled, but after making Christmas cookies all morning, she’s getting a bit antsy.

Hello JELL-O!

Since the kitchen is a mess already, I figured we might as well break open a few boxes of JELL-O and make some stained glass jigglers and chocolate dessert.

The following recipes are extremely kid-friendly and are proven sanity savers for snowed-in parents:

STAINED GLASS JELL-O

Ingredients:

5 boxes (3 ounces each) assorted JELL-O

5 teaspoons sugar

5 cups boiling water

4 cups milk

1 cup sugar

4 envelopes unflavored gelatin (such as Knox)

Directions:

Prepare JELL-O in separate bowls, using 1 teaspoon of sugar and 1 cup of boiling water for each. Refrigerate.

In saucepan, combine milk, sugar and unflavored gelatin, bring to boil; cool.

Dip sharp knife into hot water; cut different JELL-O into pieces and place into 13-by-9-inch pan.

Pour milk mixture over JELL-O.

Chill until firm.

Cut into 1-inch squares.

FROZEN FUDGE CUPS

Ingredients:

2 boxes instant chocolate pudding

3 cups milk

1 container (8 ounces) Cool Whip

8 (8-ounce size) paper cups

16 Oreo cookies, crushed

Cocoa powder

Directions:

Mix pudding and milk until thickened.

Gently fold in 1-1/2 cups of Cool Whip.

Spoon 2 tablespoons cookie crumbs into each paper cup.

Spoon pudding mixture in each cup and repeat layers.

Cover with foil and freeze 5 hours or until firm.

Let stand at room temperature to soften slightly.

Peel away cup and unmold onto plates.

Top with remaining Cool Whip and sprinkle with cocoa powder.
