Soup–a Single Parent’s Best Friend

This isn’t really an article about how to make great soup, and I won’t be including any recipes–instead I just wanted to remind all you single parents out there what an amazing blessing a big pot of soup can be! As most of us are always looking for ways to stretch our budgets, nurture and feed our children, cut back on work lunch expenses, and manage our time well–soup can be a way to tackle all those issues.

Making a big pot of soup on a Sunday afternoon can serve as a bonding meal for the entire family on Sunday night, and then a single parent can take the leftovers in his or her lunch to work all week, maybe even having another evening of soup supper sometime in the middle of the week. I have also been known to make enough so I can freeze it–making sure that there is always something healthy and homemade in the freezer for those stressful time crunching days when we really need something hot and fast.

I think the soup pot, (followed by the Crock Pot) is a must for every single parent’s attack plan–even if you think your kids won’t eat soup (and all three of mine have gone through stages where they turned their noses up at soup), you can try stews and chili or find other dishes that are a bit more kid-friendly and ease them into soup. There are some great recipes for soups that are thick and full of foods kids like (potato cheese, hamburger, pasta, etc.) They may find that they love the idea of soup as much as we harried adults do once they get used to the concept and realize it doesn’t always have to come out of a can.

As a side note, if you’ve got a bread machine (also a single parent’s great buddy)–you can easily make some homemade bread to go with that big pot of friendly soup!
