Chicken

When I first started cooking, I hated to even touch chicken. I was a semi-vegetarian so chicken was one food that I didn’t want to fool with. But naturally, my husband liked it, and when you’re first starting out, you soon learn that chicken is one of the most inexpensive meats you can buy. It was the same for turkey too. I dreaded Thanksgiving and getting up first thing in the morning to prepare a bird that I wanted nothing to do with.
I just had to dive in and start preparing poultry no matter how hard it was. Today, it’s easy for me to handle chicken and turkey. I have learned many different ways to prepare it and even though I don’t eat it myself, I must be doing something right because the family is smiling.

Creamy Chicken and Potatoes

What you will need:

6 potatoes, peeled and cubed

1 medium onion, diced

1 small green bell pepper, diced

4 stalks of celery, diced

2 Tablespoons of seasoned flour

1 cup of milk

salt and pepper to taste

2 large pieces of chicken breast, cooked and diced

4 slices of cheese

What to do:

In a large pot, combine potatoes, onion, green bell pepper, celery and salt and pepper to a pot of water. Bring it to a boil and simmer until the potatoes are tender. Heat one cup of milk in the microwave and add the flour to the milk and stir until the flour is dissolved. While the pot is still on the stove, pour the flour mixture into the pot. Add cheese and stir until melted. Add the chicken and stir until the mixture is blended well. Allow to simmer for 30 minutes on low. Enjoy!

Serve with some garlic bread or cornbread

Here are some chicken tips:

* Refrigerate poultry as soon as you get home with it. Keep it in the coldest section of the refrigerator. It will keep for two days.

* Never thaw poultry at room temperature. This allows bacteria to develop.

* Always wash your hands after handling poultry. You want to also wipe all countertops or work surfaces and wash all utensils with soap and warm water.

* Don’t use wooden cutting boards when cutting chicken. It’s too hard to clean thoroughly.

* Never leave cooked poultry sitting out at room temperature for more than two hours.

* To check poultry for doneness, cut into poultry to the bone. If it is NOT pink, your poultry is done.
