Ingredients:
- 1/2 cup chopped onion
- 1 Tbsp Olive oil
- 4 cups chicken broth
- 1 can tomato sauce (15 oz)
- 1 tsp cumin
- 1 Tbsp salt
- 1/2 cup Monterey Jack or Cheddar cheese, shredded
- 1 clove garlic, minced
- 3 medium zucchinis, sliced
- 1 can (16 oz.) stewed tomatoes
- 1 can corn
- 1/2 tsp pepper
- Tortilla chips
Directions:
- In a stew pot, saute onion and garlic in oil.
- Add zucchini, chicken broth, tomato sauce, cumin, salt, tomatoes, corn with the liquid, and pepper to the pot.
- Bring to a boil.
- Cover, reduce heat, and simmer for 15 minutes.
- Put a handful of tortilla chips into as many bowls as you need.
- Spoon soup over chips.
- Add cheese on top.
