Spicy Tortilla Soup

Ingredients:

  • 1/2 cup chopped onion
  • 1 Tbsp Olive oil
  • 4 cups chicken broth
  • 1 can tomato sauce (15 oz)
  • 1 tsp cumin
  • 1 Tbsp salt
  • 1/2 cup Monterey Jack or Cheddar cheese, shredded
  • 1 clove garlic, minced
  • 3 medium zucchinis, sliced
  • 1 can (16 oz.) stewed tomatoes
  • 1 can corn
  • 1/2 tsp pepper
  • Tortilla chips

Directions:

  • In a stew pot, saute onion and garlic in oil.
  • Add zucchini, chicken broth, tomato sauce, cumin, salt, tomatoes, corn with the liquid, and pepper to the pot.
  • Bring to a boil.
  • Cover, reduce heat, and simmer for 15 minutes.
  • Put a handful of tortilla chips into as many bowls as you need.
  • Spoon soup over chips.
  • Add cheese on top.

Since this soup gets very hot, you will want to let it cool down a bit before eating. This recipe yields 2 1/2 quarts, and is easy to make a double batch for a bigger family or for freezing a portion for another evening’s meal.
