Spring Salads

Spring is here and that means yummy salads! I love eating salads with produce fresh from the market. While my husband grills out on warm spring and summer days, I make a cool crisp salad for all of us to enjoy. I love a grilled medium rare steak and salad on a warm evening.
These two salads are so yummy! The first one had bacon and that is always the start of something good. I omit the almonds due to an allergy in the family and raisins since we just do not care for them. You can also substitute fat free mayo for the mayonnaise. In addition, I cut the sugar down by half but you will have to determine that change for yourself.

Spring Salad

Ingredients

12 slices bacon

2 heads fresh broccoli, florets only

1 cup chopped celery

1/2 cup chopped green onions

1 cup seedless green grapes

1 cup seedless red grapes

1/2 cup raisins

1/2 cup blanched slivered almonds

1 cup mayonnaise

1 tablespoon white wine vinegar

1/4 cup white sugar

Directions

1.Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

2.In a large salad bowl, toss together the bacon, broccoli, celery, green onions, green grapes, red grapes, raisins and almonds.

3.Whisk together the mayonnaise, vinegar and sugar. Pour dressing over salad and toss to coat. Refrigerate until ready to serve.

Orange Spring Salad

Ingredients

1 and 1/2 orange, juice only

1/2 lemon, juice only

1/2 small red onion, chopped

1/4 cup extra virgin olive oil

1/8 teaspoon fine grain salt

4 handfuls of salad greens, washed and dried (I try to mix up as many different greens as I can for variety)

Directions

Mix the juice, olive oil and salt together. Use a whisk and be sure it gets mixed thoroughly. You can add the orange segments to your salad as well. Combine all and enjoy!
