St. Patrick’s Day Sandwich Cookies

Have a little festive fun on St. Patrick’s Day by baking some cookies with Irish green filling. These sandwiches cookies are super simple because the batter is based on a cake mix. The filling is a basic cream cheese frosting tinted green.

You can also make ice cream sandwiches with these cookies using mint chip ice cream or lime sherbet.

If you want to go all out, make shamrocks out of the cookie dough. Do this by rolling out the dough and using a shamrock-shaped cookie cutter. Alternatively, shape the dough into three small balls for each cookie, and flatten them into a shamrock shape on the cookie sheet and add a stem.

Sandwich Cookies

1 box yellow or chocolate cake mix

1/2 cup shortening

1 egg

1. Preheat the oven to 350 degrees.

2. Stir together the cake mix, shortening and egg until thoroughly mixed. With your hands, shape the dough into 1-inch balls.

3. Flatten each ball slightly on an ungreased cookie sheet.

4. Bake the cookies 10 to 12 minutes until the edges are lightly browned. Remove from cookie sheet onto a wire rack and let cool completely.

Frosting

1/4 cup butter, softened
4 ounces cream cheese
2 cups powdered sugar
1 tsp. vanilla extract
2 -3 drops green food coloring

1. Beat the butter and the cream cheese together.

2. Add powdered sugar and vanilla. Beat until creamy. Add food coloring and beat until blended.

For sandwich cookies, frost one side of a cookie with a thick layer of icing and top with another cookie.

For ice cream sandwiches, let the ice cream or sherbet sit out for ten minutes or so until it is softened enough to scoop easily. Spread on a cookie and top with another. Wrap in plastic wrap and freeze for thirty minutes.
