My Husband and I really enjoy going to dinner and trying various appetizers. In our quest to taste a variety of good food we discovered that we both love artichokes. Frequently restaurants will serve a creamy dipping sauce for the artichokes. I grew up dipping the steamed leaves in melted butter. It was ok but did not leave me salivating for more. The restaurants seem to steam and then grill the artichokes and of course plate them along side this tasty sauce. The result is a yummy appetizer! In fact my Husband and I will often make the artichokes and dip along side a baked potato and call it dinner.
It took quite a bit of trial and error to get the sauce just the way I wanted it. I found myself either making a huge portion, which would serve twenty or not enough. I hope you’ll agree that the trial and error paid off and enjoy this sauce as much as we do. Give it a try and let me know what you think!
For This Recipe You Will Need:
2 Artichokes
½ Cup of Mayonnaise
½ Cup Miracle Whip Salad Dressing
1 TBS Sweet Pickle Relish
2 TBS Ketchup
2 TBS Horse Radish (to taste)
1 TBS Chile Powder
1 tsp. Salt
To Prepare This Recipe:
Start by trimming the leaves on the artichoke with scissors. Once completed cut the artichoke lengthwise and place in a food steamer face down. Cook for thirty-five minutes.
To Prepare The Sauce:
Mix Mayonnaise, Miracle Whip, Pickle Relish, Horseradish, Ketchup, Chile Powder and Salt together. Set in the refrigerator and allow flavors to develop together.
When the artichokes are done cooking remove carefully from the steamer with a set of tongs. With a small spoon scoop out the purple thorny inside. Place the Artichokes on a plate along side the sauce and enjoy!
The sauce is also wonderful on salmon.
