Stir Fry with San-J: Healthy and Gluten Free


Eating healthy and eating clean can be easy if you enjoy what you eat. That is the key to enjoy your food. When we diet and we feel we are depriving ourselves our healthy choices soon become a memory. We want flavor. Flavor can fend off cravings and keep you on track with your diet.

One of my favorite meals is stir fry. However, it is not always a favorite for my kids. They have a tendency to reject the veggies and prefer noodles over rice. Some families have issues with gluten. If you need flavor a family will love and you need it gluten free I can introduce you to your new best friend; San-J. San-J is a company that makes the best soy sauce, teriyaki sauce and marinades around. I do not want to top my organic veggies and Jasmine rice with chemical laden marinade. San-J contains natural ingredients. They also carry and organic and gluten free soy sauce that is great for dipping or for your simple stir fry meals. My kids actually love the full flavor of the Teriyaki and the Soy. Asian BBQ though is a favorite for all of us! We can all sit down for a healthy meal that we all enjoy.
Below is a great recipe featuring the Asian BBQ Sauce!

ASIAN GREEN TEA BBQ WILD RICE

INGREDIENTS

12 ounces fresh cranberries

1 1/2 cups brewed green tea, chilled

1 small red onion, finely chopped

1 cup fresh kale, chopped

1 1/2 cups wild rice

3 cups apple cider

2 large plum tomatoes, diced

2 celery ribs, cut into 1/4-inch-thick slices

2 Tbsp. olive oil

1 cup soy nuts

1/4 cup San-J Asian BBQ Sauce

1/4 tsp. freshly ground black pepper

1/4 cup fresh cilantro, finely chopped

INSTRUCTIONS

Preheat oven to 350°F. Plump the cranberries in brewed green tea for 30 minutes. Drain cranberries and set aside; transfer liquid to a large pot over medium heat. Add onions; cook until translucent. Add kale, cook for another 4 minutes.

In a large sauce pot, bring the wild rice and apple cider to a boil. Transfer mixture to a deep baking dish. Add onion mixture; mix well to combine. Bake in the oven for 1 hour 30 minutes or until the rice absorbs all liquid. Remove from oven.

In a large serving bowl, gently toss cooked wild rice with cranberries. Add plum tomatoes, celery, olive oil, soy nuts, San-J Asian BBQ Sauce and pepper. Garnish with cilantro.
