Stuffed Italian Sandwich

Super Bowl is almost exactly a week away. It is time to get those recipes ready and start purchasing your ingredients for your party. Still have not decided what to make and are looking for something easy that you can do before the party? Here is a recipe that fit that bill to a T! One great thing about this recipe (other than its great taste) is it needs to sit in the fridge twenty-four hours before serving. Just make it up ahead of time and while your guests are enjoying the Super Bowl, you can too!

Your shopping list consists of basil leaves, pitted kalamata olives, capers, garlic cloves, olive oil, 3/4 pound of thinly sliced Italian meats (salami, mortadella, and soppressata are great choices if you can find them), 3/4 pound of provolone cheese, a 16 ounce jar of roasted red peppers (I love these!), a large sweet onion, 6 plum tomatoes, and a 2 pound round load of French or sourdough bread.

In a food processor, chop 1 cup of basil leaves, 1/2 cup of kalamata olives, 1/4 cup of drained capers, and ½ a clove of garlic. Add 1/2 cup of olive oil and mix well. Season your mixture with a dash of salt and pepper. Cut thin slices of the provolone cheese, onion, and plum tomatoes. Drain your roasted red peppers.

Cut your bread in half horizontally and remove enough of the inside top layer to leave a 1-inch shell. Spread half of your food processor mixture on the bottom part of your loaf. Layer your sliced meats, slices of provolone, roasted red peppers, slices of onion and tomatoes until they are gone. Take the remaining food processor mixture and spread it on the inside top part of your loaf. Press it firmly on the bottom layer of the loaf and wrap tightly with plastic wrap. When ready to serve, cut the loaf into wedges.

This is excellent served with chips or veggies and dip. It serves 6 – 8 people, so you may need to adjust it according to your guest list.
