Sugar Free Cookies

These cookies would be the perfect cookie for you to add to your baking list this Christmas. The great thing about this cookie is that it is sugar free. There are several sugar alternatives available now like Splenda, Nutra Sweet and Sweet & Low, just to name a few. These sweeteners try to provide the sugar taste and they are healthier too. Sometimes, you can’t even tell the difference. These cookies don’t take long to bake and they are delicious for everyone. If they don’t get eaten, pack them up in a baggie and send them over to an elderly neighbor. They will enjoy your special treat. You can also take them to a shelter for children. Kids love cookies and would appreciate the gesture. You get to share a little holiday spirit.

Here is what you will need:

1 & 1/4 Cup flour

1/4 teaspoon baking powder

1/2 Cups of no fat margarine, example: Promise

3 Tablespoons of sugar alternative

1 egg, beaten

1 teaspoon vanilla

2 teaspoon cinnamon

1/2 Cups of nuts, if desired. Pecans or walnuts are great

What you need to do:

Preheat your oven to 375 degrees. In a seperate bowl, mix together flour, baking powder and salt. In another bowl, mix Margarine, sugar alternative, beaten egg, and vanilla. Add flour mixture and nuts, if desired. Refrigerate the mixture for one hour to set. Then, on an ungreased cookie sheet, drop by spoon fulls until all batter is used. Sprinkle the top with cinnamon. Bake in oven for 15 minutes. Remove from pan immediately.

Suggestions: Since it is Christmas time, you could use your cookie cutters to make festive shapes out of your cookie dough. To use cookie cutters, simply roll the dough out on a floured area. Roll dough out and cut. Place shapes on ungreased baking sheet and sprinkle with cinnamon.
