Summertime Banana Soup
2 tablespoons butter
1 onion, finely chopped
2 cups chicken broth
3/4 cup unsweetened coconut, shredded
2 bananas, ripe and cut into 1-inch pieces
3 3/4 cups milk
6 sprigs of mint
In a saucepan, melt butter. Add onion. Cover with wax paper, steaming on low until onion is transparent. Remove paper and then add broth and coconut, bringing to a boil. In a blender, puree bananas. Gradually, pour soup mixture in the blender with bananas, blending until smooth. Return mixture to the saucepan and stir in milk. Reduce heat and simmer 5 minutes. Chill and serve. Garnish with mint sprig.
