Sometimes it’s the simplest recipe and the little touches that can make all the difference. Recently I decided instead of coating the fish fillets in rice crumbs to try something different and so simple and with few ingredients.
Cajun and Coriander Fish Fillets
Ingredients
Olive oil for cooking
2 fish fillets (your choice- whatever type of fish you like best. I mostly use freshwater basa fillets.
1 -2 teaspoons Cajun spice
I handful fresh coriander or 1-2 teaspoons dried coriander
Method
Sprinkle fish fillets with Cajun spice and chopped coriander. Cook prepared fish in a little oil in a frying pan.
Turn the fish over and sprinkle other side with Cajun spice and coriander.
Cook till fish is white and cooked. This will take a few minutes either side.
This is simple and delicious. If you need more, just adapt the number of fish fillets according to how many people you are feeding and adjust spice and herbs accordingly.
Another simple recipe for a tasty tip is Mexican Dip. This is the easiest recipe you could ever hope to make and it tastes great. It has all of two ingredients. I made this for my book launch last weekend and it was the most popular of the several dips. And the beauty of it is, it is so easy and tastes great.
Mexican Dip
Ingredients
2 cups sour cream
I packet taco season
Method
Combine taco seasoning with sour cream. Mix till all blended together.That’s it!
HINT
Vary the taco seasoning according to your taste. I like it spicy so I added the whole packet. Judging from the speed at which it disappeared, there were no complaints from those who ate it.
Instead of serving with corn chips try this.
Cut either Lebanese bread, or gluten free wraps if you are gluten free, into triangles. Brush with oil and sprinkle with salt and pepper to taste. Cook in moderate for a few minutes, till golden brown and crisp. Again this disappeared with the dip at a rate of knots and was by far the most popular choice to go with the dip.
