Super Fab Super Bowl Party Eats

You don’t have to travel to Dallas to celebrate Super Bowl XLV. In fact, I would venture to guess that there is more collective partying going on right now in Wisconsin and Pennsylvania than in ice-covered Dallas where airports have been shut down and highways are littered with stranded vehicles.

I live less than an hour from famed Lambeau Field, home to the Green Bay Packers, and I can attest to the party-like atmosphere that has engulfed the entire state of Wisconsin. People here have been celebrating since the Green and Gold beat the Chicago Bears in the NFC Championship game two weeks ago.

Within hours of beating up on the Bears, my family received no less than five invitations to various Super Bowl parties, though we will only be attending two. While I won’t be hosting the indoor tailgate celebrations I will be preparing a dish to pass to go along with the other tasty treats.

One of the party hosts will be featuring a baked potato bar where guests can add their favorite toppings to a standard spud. This idea is fabulous if you are looking to feed a large crowd. Another great option is to have a soup bar. Simply prepare a few popular soups, such as Minestrone or Mexican Tortilla and allow your guests to top each with garnishes, such as grated Parmesan cheese, tortilla strips, salsa, sour cream and croutons.

I’m not making soup for the Super Bowl parties we’re attending, just some good old fashion homemade pizza that is so much better than delivery:

Pepperoni and Tomato Flatbread Pizza

Ingredients:

1 frozen pizza dough (or homemade dough)

3 ounces olive oil

2 cups shredded Mozzarella cheese

6 leaves fresh basil, chopped

2 Roma tomatoes, sliced

1 package of sliced pepperoni

Salt and pepper to taste

Directions:

Preheat oven to 425 degrees.

Roll pizza dough out until it is very thin and cut in to a rectangle.

Make holes in the dough with a fork.

Place dough on a cookie sheet and brush with olive oil.

Bake for about 10 minutes or until the crust is golden brown.

Remove from oven and cover with cheese, pepperoni and tomatoes.

Place pizza back in the oven until cheese is melted.

Remove from oven.

Just before serving top pizza with remaining olive oil, salt, pepper and fresh basil.
