Super Bowl Sunday doesn’t kick off until next month, but if you live in Wisconsin or Illinois, then the big game is less than 24 hours away. Tomorrow the Green Bay Packers square off against the Chicago Bears in the NFC Championship game. Final preparations are underway at Soldier Field for what many are calling one of the biggest games in franchise history.
I happen to live in Wisconsin, and whereas I am not a die-hard football fan, there is no escaping the hype surrounding Sunday’s humongo game. Tailgating parties are taking place from church parking lots to hotel lobbies. The excitement is palpable and the menu is not to shabby either.
Whether or not you decide to spend part of your day cheering on any of the NFL’s final four (Packers, Bears, Jets or Steelers), the following recipes for tailgating snacks might come in quite handy the next time you have to feed a crowd of hungry house guests:
Super Nachos
Ingredients:
1 pound blue tortilla chips
1 pound yellow corn chips
1 pound Velveeta
10 ounces diced tomatoes; undrained
10 ounces diced green chilies; undrained
1 pound lean hamburger meat
1 package Ortega taco mix
1/2 cup diced fresh tomato
1/2 cup chopped green onions
1/2 cup sliced olives
1pound shredded cheddar cheese
1 cup sliced jalapenos
1/4 cup guacamole
1/4 cup sour cream
Directions:
Mix Velveeta, tomatoes and chilies in a two-quart bowl.
Place in microwave for 5 minutes or until heated through.
Stir to remove any lumps.
Cook hamburger and drain excess grease.
Add taco mix and cook until done.
On a large platter, combine half of the chips and half of the shredded cheese, half of the taco meat and half of cheese sauce. Repeat. Finish by adding all the other ingredients, making sure to place sour cream and guacamole on top.
Spicy Snack Mix
Ingredients:
8 cups of corn, rice and wheat Chex
1 1/2 cup of peanuts
2 cups small pretzels
2 cups of miniature bagel chips
1 1/2 cup sesame snack mix
1 1/4 cups of butter
3 tablespoons Worcestershire sauce
1 package of dry Ranch dressing mix
Directions:
Preheat oven to 250 degrees.
Melt butter in a large pan.
Mix the Worcestershire sauce and Ranch dressing mix.
Pour remaining ingredients into a big bowl.
Pour in butter mixture.
Toss until the cereal mixture is evenly coated.
Spread onto a couple cookie sheets and bake in oven for approximately 30 minutes.
