Swedish Fruit Soup
3/4 cup dried apricots
3/4 cup dried prunes
6 cups cold water
1 cinnamon stick
2 lemon slices, 1/4-inch thick
3 tablespoon of quick cooking tapioca
1 cup of sugar
2 tablespoons raisins
1 tablespoons dried currants
1 tart apple, peeled, cored, and sliced
Soak the apricots and prunes in 6 cups of cold water for 30 minutes. Add cinnamon, lemon, tapioca, and sugar, bringing to a boil. Reduce heat and simmer while covered for 15 to 20 minutes, stirring occasionally to prevent sticking. Add raisins, currants, and apple slices. Simmer an additional 5 minutes until apples are tender. Pour the mixture into a bowl and cool to room temperature. Remove the cinnamon stick and serve at room temperature or place in refrigerator for chilled serving.
