Sweet & Sour Cucumber Salad
3 large cucumbers, peeled and thinly sliced
1 medium onion, thinly sliced
1 Thai chili, seeded and thinly sliced
Dressing
1/4 cup white vinegar
1/4 cup salad oil
1/2 teaspoon salt
2 teaspoons sugar
1/2 teaspoon garlic powder
Put the cucumber slices in a shallow bowl. Arrange the onion slices on top and sprinkle with the chili slices. Combine all the dressing ingredients, mixing well; season with salt, if desired. Pour the dressing over the onions and cucumbers. Refrigerate a few hours or overnight to allow flavors to blend.
