Sweet Potato Cookies

In my never-ending quest to try to get my almost-two year old to eat something healthy, I stumbled upon this recipe for sweet potato cookies. I baked them the morning of our playgroup and snuck one to Will before we left. I was ecstatic when he ate it! But, at playgroup, he ate a bit of one, but that was it. He did take about one bite of one of the few cookies we brought back home with us. However, the other children in the playgroup loved them and several of the moms wanted the recipe.

I thought the cookies were tasty and healthy for me as well, so I will make them again. You can also make this as a loaf instead of cookies if you want. I used the 3/4 cup of quick cooking oatmeal that the recipe called for, but next time I make the cookies, I will add a little extra oatmeal to give them something to hold their shape better.

For this recipe, you will need a can of sweet potatoes, brown sugar, white sugar, eggs, margarine, flour, baking powder, cinnamon, nutmeg, quick cooking oatmeal, and raisins. I actually cooked a sweet potato, peeled it, and mashed it like the original recipe called for, but I think it is quicker to use a can of sweet potatoes. I would have done that if I had had a can in my pantry.

Preheat the oven to 350. Mix together 3/4 cup of margarine, 3/4 cup of brown sugar, and 1/2 cup of white sugar. Once that is mixed well, add 1 egg, 1 cup of sweet potato, 1 1/2 cup of flour, 1 teaspoon of baking powder, 1/4 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, and 3/4 cup of quick cooking oatmeal. Add 1 cup of raisins to the mixture last. Drop teaspoons of the mixture on a baking sheet and cook for 10 to 12 minutes.
