Sweet Summer Salad
Celebrate summer’s sweet bounty with this salad. A great use for leftover corn on the cob.
INGREDIENTS:
2 large fresh tomatoes, rough chopped
1 1/2 cups fresh corn, blanched and drained
8 fresh basil leaves, rough chopped
3 tbs balsamic vinegar
1/4 cup extra virgin olive oil
DIRECTIONS:
1. Combine all ingredients in a large bowl.
