Nut Caramels
Ingredients
4 ounces margarine
8 ounces brown sugar
1 can condensed milk
2 tablespoons golden syrup
1 teaspoon vanilla essence
1 cup walnut pieces
Method
Melt butter in a saucepan. Add brown sugar, milk and golden syrup. Stir constantly till mixture leave the sides of the saucepan. Add vanilla essence and walnut pieces.
Pour into a greased and flowered tin. Mark into squares. When cold cut and wrap in cellophane and you have a simple home made gift for friends or neighbors.
Chocolate Nut Fudgies
Ingredients
8 ounces raw sugar
2 tablespoons chocolate or cocoa
Half cup milk
1 dessertspoon margarine
Vanilla essence
Pinch of salt
Quarter cup of chipped walnuts
Method
Place all ingredients with the exception of walnuts into a saucepan and bring to the boil, stirring all the time. Reduce heat and simmer, stirring constantly.
Beat till starting to thicken. Add chopped walnuts. Continue beating till thick.
Pour into greased and floured tin. When cold cut into bars and wrap in cellophane.
HINT
In either of these recipes, replace walnuts with pecans, macadamias or slivered almonds for a nice change.
Fruit Squares
This is so easy you’ll make it again and again.
Ingredients
1 cup gluten free self raising flour
I dessertspoon gluten free baking powder
1 cup mixed fruit
1 beaten egg
1 cup brown sugar
4 ounces margarine
Method
Place flour and fruit in a mixing bowl. Add the beaten egg.
In a saucepan melt brown sugar and margarine. Pour over flour, fruit and egg mixture. Mix well.
Bake in a slab tin in a moderate oven for 20 minutes.
Cut into squares while still warm.
Hint.
Nuts or chocolate chips can be added. In this case, just reduce the amount of mixed fruit.
Put several on a paper plate and wrap in cellophane. Tie it with a ribbon and you have a nice gift.
