Have you ever had this salad? It’s made with couscous and is surprisingly simple to make. The flavors are fresh and delicious—and it’s healthy! I’ve seen a lot of recipes for this salad. Though they are all relatively similar, there are unique differences. So I took what I liked, played around with the amounts, and added a few surprises of my own. Here’s what I came up with. For this recipe you’ll need:
1 ½ Cups Couscous (found in the rice aisle)
1 ½ Cups boiling water
2 tsp. dried mint
2 tsp. kosher salt
1 tsp. allspice
Juice of 1 lemon
6 green onions (white and green part), chopped
5 seeded and diced Roma (Plum) tomatoes
¼ Cup Olive Oil
1 ½ Cups fresh parsley
¼ Cup fresh mint
To Make This Recipe:
Place the couscous, salt, allspice, and dried mint in a large bowl. Pour the boiling water over the couscous then immediately cover the bowl with plastic wrap or aluminum foil and let it sit for 10 minutes. Do not stir.
In the meantime, chop the onions, tomatoes, parsley, and mint.
After 10 minutes, remove the cover from the bowl and fluff the couscous with a fork. Next, add the lemon juice, green onions, diced tomatoes, parsley, mint, and olive oil. Use your fork to fold the ingredients in together. Serve room temperature or refrigerate for later.
This recipe is delicious eaten the next day. If you’re not crazy about one of the ingredients, go ahead and leave it out. Adjust the seasonings and flavorings to suit your own taste. Enjoy!
