Are you looking for a fast and yummy meal that even the kids will love? Get it here. I threw this one together this afternoon and then left my husband in charge of putting it into the oven on a busy evening, and it turned out perfect. Try it the next time you have some boneless, skinless chicken tenders (or breasts) and no idea of what to do with them.
My kids love tacos, so I knew they would enjoy this dish which is much less work.
Ingredients:
About 10 or so boneless, skinless chicken tenders (or butterfly and cut three boneless, skinless chicken breasts into 9 strips)
Taco seasoning (I used mild)
Taco sauce (I used mild)
1/3 cup of water
Shredded cheddar cheese
Directions:
Pour the water into a 13×9 baking dish, then add the chicken tenders, laying them flat. Sprinkle about half a packet of taco seasoning. Add more if you want the dish to be spicier.
Next, drizzle about three to four tablespoons of taco sauce over the chicken. Cover the dish and put it in the refrigerator for a couple of hours to infuse the flavors.
Bake, uncovered in a preheated 375 degree oven for 35 minutes. Remove the dish from the oven, sprinkle cheddar cheese on the top of the chicken (about 1/4 cup) and return it to the oven. Continue baking for an additional five minutes or until the cheese is melted and bubbly.
Serve the chicken with sour cream.
This chicken would pair well with spanish rice or even just plain brown or white rice. You can add a salad and perhaps some refried beans for a nice Mexican dinner. Experiment with the amount of taco seasoning and taco sauce to make it just right for your family. I went with mild because I have young children, but feel free to spice it up a bit more.
