Tacos Sans Ground Meat

How often do you make tacos for a meal? For some reason that is one meal idea that I forget about, and there’s no reason to forget about how painless and quick tacos are to get on the table. Really. So why can’t I remember to make them more often?

The other night I made tacos for our evening meal. Because I used canned kidney beans instead of ground meat or refried beans, my meal became less of a hassle (no cooking!), was much less expensive, and much easier on my figure. Sure I still had to chop fresh veggies and warm up the kidney beans on the stove, but what trouble is that when I only stood in the kitchen no longer than 10 minutes to prepare a complete meal? Not much!

And can I tell you how good these tacos were? Because I seasoned the kidney beans well with sea salt, ground pepper, garlic powder, and chili powder, no one missed the ground meat. I promise you that even I was surprised at how good the tacos came out. So, if you’re interested in trying this Tacos Sans Ground Meat recipe, here are both my ingredients list and directions for how to prepare ’em:

Ingredients:

  • One can kidney beans
  • Seasonings: chili powder, sea salt, ground pepper and garlic powder
  • Taco shells
  • Shredded Cheddar cheese
  • Sour cream
  • Chopped onion or green onions
  • Shredded lettuce
  • Salsa and/or chopped tomato

Directions:

  • Heat kidney beans over medium heat; add seasonings and stir.
  • Warm taco shells in a 300 degree oven for 5 minutes.
  • Chop onion/green onions, lettuce and tomato.
  • Prepare taco shells by spreading one layer of each of the following: sour cream, kidney beans, salsa/tomato, cheese, lettuce, and onions onto each taco.
  • Plate tacos, and serve while still warm.

Really, preparing and serving tacos without any meat is too easy. If your family will like this recipe as much as my family does, you just may want to schedule to make these once every two weeks.
