You may not know this, but I love sandwiches. I mean I really, really love them. I also like pesto, a lot. It’s delicious on pizza, on pasta, and yes, on sandwiches. I commonly refer to this salad as Greek Salad because that’s what most people relate it to. However, I am married to a Turk, and in Turkey, this salad is called Shepard’s Salad. Today, my son and I were out exploring the neighboring towns. I like Jacksonville, but there are some things I miss about not living in a larger town. If you are looking for a summer salad recipe, this one is great. It combines mango, chicken, tortillas, black beans, red bell peppers with a honey-cumin vinaigrette dressing – yummy! Trust me, you don’t need to know how to pronounce this sandwich to be able to enjoy it. A Muffaletta is an Italian sandwich that combines meats, cheeses, pickled vegetables, and olive tapenade, to create an undeniably delicious treat.
