Quick Breads in the Bread Machine

Did you know that many bread machines will allow you to make quick breads in addition to regular yeast breads? You can use many bread machine to make corn bread, cranberry bread, and more. I love making quick breads in the bread machine because believe it or not, I find that in some recipes, the texture is improved over my hand mixing the ingredients. I can also just add the ingredients to the machine in the morning and go take a shower, allowing the machine mix and bake, knowing that I don’t have to watch the clock. I’ve tried traditional … Continue reading

Christmas Morning Brunch Bake and Cranberry Eggnog Muffin Tops

One of our family’s favorite holiday traditions is hosting a big brunch on Christmas morning. It’s the one of the few days when my mom allows others to help her in the kitchen. Preparing this holiday meal has always been a way we spend quality time together and when you’re surrounded by comfort food everyone seems to be in a great mood. The following recipes are ones that we’ve been making for years. And the best part is you can prepare it in advance, which means you won’t be slaving away in the kitchen while the rest of the family … Continue reading

A Muffin for Mother’s Day

This is a blog for dads. If you’re a mom you can’t read it. E-mail it to your husband or just print it (without looking at it) and leave it for him to find. (For my husband this would need to be left on the laptop or the remote control.) Again, moms: DO NOT READ THIS BLOG. So dads, now that we’ve gotten rid of the moms, let’s talk about breakfast on Mother’s Day morning. I’m not a huge breakfast in bed fan, (the grandeur is lost when I’m cleaning crumbs out of bed that evening) but I definitely appreciate … Continue reading

Frugal Food: Make Some Muffins

If you know how to make muffins, you can reduce your breakfast bill! My kids are real cereal hogs. They can consume a box of cereal in one day. This can be a very expensive habit, as a single box of cereal can cost $4 or more! One of the ways I combat the cereal habit to reduce my grocery bill is to make muffins. Muffins are so easy to make. They only require a few ingredients and can be made with just about anything, including leftovers. For example, make up some corn muffin batter and fill your muffin tin … Continue reading

Is it a Cake or is it a Muffin?

A First Muffin for Kids to Cook

Jammie Muffins are an easy muffin with lots of opportunities for kids to help along the way. For some reason, these muffins taste better when you make them on a lazy morning in your jammies. Let the kids help measure and add the ingredients, mix, spoon in the batter, and add the jam. I love Jammie muffins, but they aren’t actually my favorites. We make some truly delectable muffins and breakfast breads. But those recipes take things like lemon zest, ricotta cheese, plain yogurt, or frozen cherries. These muffins don’t take anything special, and are so adaptable. I almost always … Continue reading

Vegetable Muffins for Toddlers

Once upon a time, my sweet little baby boy would eat whatever I put in front of him. Green beans, sweet potatoes, peas – he loved them all. Unfortunately, he seems to be on the pizza/cracker diet now. He will not even look at a vegetable; much less try it for mommy. In an attempt to get him to consume some vegetables (other than the tomato sauce on pizza that is), I started searching the Internet. What I found was some moms suggestion something I had never thought of – vegetable muffins! Some of the recipes I found even said … Continue reading
