Veal Paprika

Veal is one of those meats people either love or they can’t stand. My mother couldn’t eat veal. It made her sick. I love it. I used to buy a side of veal for the freezer. That was back in the days before veal prices got ridiculously expense. These days I mostly buy a shoulder to roast in the barbecue. I might cut some of the shoulder to use in this dish before cooking the roast. Otherwise if I see veal steak cheap I buy it. You can also use veal chops if you find them on special. But instead … Continue reading

Yummy Mushrooms

I’m a big fan of mushrooms and try to forget the fact they really are fungi and think of them as vegetables. Unlike the Romans who believed mushrooms were a gift from God only to be used on special occasions, I use mushrooms a lot. When they are cheap I buy them in large quantities. I tend to put them in just about every casserole or crock pot meal I make as well as using them in pies, enchiladas, salads, quiche, and just about anything else I’m making or simply on their own. A trick my son-in-law taught me is … Continue reading

Autumn Recipes: Q is for Quiche

When I first considered featuring an alphabet of autumn recipes I wondered if I would have an adequate variety of recipes to support all 26 letters. Today is one of the days I was most concerned about (today and later next week when I hit X). Luckily, my mom reminded me that one of the dishes our family used to eat at least once a week during the autumn months when I was growing up begins with the letter Q. I adore quiche. Not only is it extremely easy to prepare, it’s also one of those versatile all-in-one dishes that … Continue reading

Mid Week Steak Dinner

Thanks to my generous grandparents (most notably my gourmet cook grandfather) I grew up eating steak every Saturday night. Consequently, I always considered the delicious cut of meat to be a weekend treat. But, these days steak is affordable enough (depending on the cut) and recipes are plentiful enough to create amazingly tasty meaty dishes in the middle of the week. The following steak recipes are simple enough to prepare even on a night when you get home from the office later than expected. The first one, which features beef tenderloin steaks swimming in a creamy mushroom sauce, can be … Continue reading

Heart Healthy Vegetarian Dishes

Cooking for a mother who is on a low calorie, low cholesterol diet PLUS a husband who has diabetes and needs to eat foods that are low in fat, salt and sugar can be challenging to say the least. However, it is a task that my best friend has met full on… and succeeds at in ways that never cease to amaze me. The following recipes are ones she prepares for her family on a regular basis. I had a chance to sample them during my recent visit home. Because neither one of them calls for meat they were great … Continue reading

Super Stuffed Mushrooms

What does bacon, goat cheese, crab and black olives have in common? They make tasty additions to stuffed mushroom recipes. (Just ask Aimee.) I wouldn’t use all of them in the same recipe, but I have successfully combined two or three of them to make delicious mushroom appetizers. The first stuffed mushroom recipe I’m sharing comes from a friend of mine who had a version of it at a local restaurant and tried to recreate it in her own kitchen. She served her Pancetta, Pine Nut and Goat Cheese Stuffed Mushrooms at a party she had over the Christmas holidays … Continue reading

King of the Mushrooms

Button mushrooms are the most commonly eaten mushroom in the United States. Ninety percent of all mushrooms consumed are the plain, white button mushroom. That’s a lot of mushrooms. (They’re my favorites!) Good news for you if you like button mushrooms, too — researchers from Tufts University have decided that this is the healthiest mushroom around. White button mushrooms can do some amazing things like: Boost immune system activity. Ward off viruses (thanks to that revved up immune system action). Destroy tumors. Protect against cancer, thanks to high antioxidant content. Antioxidants kill dangerous free radicals in the body (that can … Continue reading

Health Benefits of Mushrooms

Did you know September is National Mushroom Month? I didn’t either until I saw a sign in the supermarket yesterday encouraging shoppers to “Celebrate the Mushroom.” At first I thought it was a ploy to get customers to buy mushrooms. But when I got home I did some research and learned that this month is indeed National Mushroom Month. I also discovered that the formidable fungi offer many health benefits. In fact, several Eastern cultures have long revered mushrooms as both food and medicine. But it wasn’t until just recently that researchers have been able to back up those claims … Continue reading
