Thanksgiving Recipes: Super Stuffing and Sensational Sweet Potatoes

There’s one in every family–the one must-have dish that makes a Thanksgiving meal complete. For some it’s Aunt Kay’s Pumpkin Pecan Pie, for others it’s grandma’s Extra Creamy Mashed Potatoes or mom’s to-die-for Turkey Gravy. In our family it’s my dad’s Cornbread Stuffing and my great aunt’s Orange Sweet Potatoes with Cookie Crumble Topping. If you are looking to add to your family favorites this year, consider trying the following recipes: ORANGE SWEET POTATOES WITH COOKIE CRUMBLE TOPPING Ingredients: 6 large sweet potatoes 1 stick unsalted butter, softened 1 cup firmly packed brown sugar Fresh orange juice 1 cup sweet … Continue reading

Super Simple Sides

If you are looking for an easy side dish to serve with your glazed Easter ham or spicy Easter lamb then you’ve come to the right place. The following recipes are not only super simple to prepare they are also easy on your wallet. The first dish take less than 30 minutes to make and calls for only a handful of ingredients. However, its simplicity only adds to the dish’s overall flavor. The trick is finding the walnut oil. I buy my flavored oils from gourmet stores, but every once in a while you can find walnut oil at larger … Continue reading

Sneaky Mama’s Baked Veggie Fries

It has been a long while since I’ve posted a Sneaky Mama recipe. But in all of my holiday cooking and baking, I was challenged to come up with something that my eight year old will eat. She is queen of the picky eaters. I’m just waiting for the full blown coronation. So in response to coming up with something that she will enjoy at the Thanksgiving dinner table (and no, she doesn’t like mashed potatoes, turkey, sweet potatoes, gravy stuffing or even pie) besides rolls, I’ve created some vegetable fries. Try out the various seasonings and see what your … Continue reading

Hawaiian Style Thanksgiving Dishes

No, you don’t have to live in Hawaii to create the following recipes. I selected ones that included ingredients that are readily available at markets on “the mainland.” For those of you who do not read my regular blogs (Valorie has been kind enough to allow me to guest blog here) I was born and raised in Hawaii, but left the island paradise nearly two decades ago to attend college in Wisconsin (don’t ask)… and the rest, as they say, is history. However, no matter where I spend Thanksgiving I like to include a bit of home into my feast. … Continue reading

What Don’t You Understand About Moderation?

OK, this may be a bit of tough love today. Sometimes we need that and sometimes it just ticks us off. I apologize if this ticks you off. On one of the weight loss forums that I moderate here, people are starting to go off their diets in anticipation of Thanksgiving. In particular, the big Thanksgiving food fest that this holiday has become for many Americans. I take serious issue with this mindset. It seems to me that Thanksgiving has become less about thanks and gratitude and more about seeing how much food we can pack into our already overweight … Continue reading

Sweet Potato Cookies

In my never-ending quest to try to get my almost-two year old to eat something healthy, I stumbled upon this recipe for sweet potato cookies. I baked them the morning of our playgroup and snuck one to Will before we left. I was ecstatic when he ate it! But, at playgroup, he ate a bit of one, but that was it. He did take about one bite of one of the few cookies we brought back home with us. However, the other children in the playgroup loved them and several of the moms wanted the recipe. I thought the cookies … Continue reading
