Snack Habits in My Pack

It seems that there are two types of dog: the dog who will eat anything in front of him, whenever it is available (like my dog Moose) and the dog who only eats when she’s hungry (like my dog Lally). When it comes to snacks, Moose and Lally are also very different. Moose will try anything once. Twice. Seventeen times. Lally is a much pickier eater. She only likes certain things and will disdain anything that isn’t on her list. Her likes include chicken jerky, chicken or beef flavored chewy treats, and the occasional rawhide (but only when she’s in … Continue reading

What Can The Mediterranean Diet Do For You?

We keep hearing about the Mediterranean Diet but nobody tell us exactly what it is. We keep hearing about what it can do for those of us with heart disease, diabetes and arthritis and yet, where are the instructions? We’re told the Mediterranean Diet leads to a longer life. What we aren’t told is how to get started on the Mediterranean Diet. In the 1950s, Ancel Keys, a nutritionist, began what was called the Seven Countries which linked the eating patterns of Greece, Italy, Yugoslavia, Finland, Netherlands, Japan and the United States. The study found that those who followed a … Continue reading

Seeing Red on Valentine’s Day

If you are not expecting to be treated to a five-course gourmet meal on Valentine’s Day—-join the club. There are many families (mine included) that will be dining at home Thursday night. However, that doesn’t mean you can’t celebrate Love Day with a festive meal. I’m not talking about an extravagant, expensive dinner featuring steak and lobster (though, that would be nice… it would be even nicer if you weren’t the one having to prepare it). Nor am I suggesting you bypass the main dish and head straight for a delectable Valentine’s Day dessert. Rather, I’m merely suggesting that you … Continue reading

Salsa-fied Chicken

In a previous blog I told you that my best friend was doing something a bit different this holiday season. Instead of baking dozens of batches of Christmas cookies, she decided to jar her own homemade salsa (fruit and traditional) and give those out to friends and colleagues. However, I failed to include the recipe she attached to each jar of salsa. It’s a dish she calls SALSA-fied Chicken. It’s extremely easy to make (its done in a crock-pot) and her kids love it. I’ve also included her recipe for traditional salsa and one for Pico de Gallo. SALSA-fied Chicken … Continue reading

Cucumber and Tomato Salad

During the hot summer months, we’re always on the lookout for cooling recipes. Some foods raise the body temperature, like meat and peanuts, while others lower it, like tomatoes, watermelon, and grapes. When I found this delightful recipe, I was all over it like a fruit fly on a banana. Now, there aren’t exact amounts for this recipe – it’s all according to taste. Peel and dice several cucumbers. If you’re preparing for a large crowd, do a lot, and if there will just be a few people, do a few. (This is very scientific, you see.) Now dice several … Continue reading

Week Night Menu: Pasta Pomodoro, and Stuffed Garlic Bread

It’s been awhile since my last menu, admittedly because I’ve been so busy, I haven’t had a chance to cook! So here is my most recent delish dish, to be completed with a Ceasar salad. If you’re new to the menu series in the food blog, the goal is to give one complete menu, that can be fixed during a week night. If you do the prep work the night before, putting the meal together shouldn’t take longer than 30 minutes! Pasta Pomodoro is a perfect summer dish because it is made with fresh ingredients and is intended to be … Continue reading

Growing Tomatoes Indoors

Growing your own food is certainly a very frugal hobby. But what do you do when it is winter, when your climate has a short growing cycle, or when you have a postage-size yard? Why not try growing your food indoors? Tomatoes are one of the best plants to grow indoors. An indoor tomato plant will yield fresh tomatoes any time of the year with little more than watering. For growing indoors, I prefer cherry and plum tomatoes. They are smaller in size, and there are plenty of sweet varieties that taste so yummy straight off of the vine. The … Continue reading

10 Fabulously Healthy Foods

I love to blog about rich, fattening foods here, but I also think about my health. With a rambunctious two year old, I need to do all I can to maintain my health, in hopes of being able to keep up with him! So here are ten healthy foods I plan to start incorporating into my diet: 10. Garlic Okay, many of us think of garlic as a way to ward off vampires, but it can also ward off the common cold and the flu. Garlic has many vitamins, including C and B6. It is also believed to help protect … Continue reading

Marinated Tomatoes

In the summer, when tomatoes are at their ripest, there is nothing else quite like them. Juicy and sweet, tomatoes are perfect on a sandwich with miracle whip, atop bruschetta, in a caprese salad, etc. They are good raw or cooked, sliced or diced. Whether tomatoes are in season or not, this is a recipe that allows you to get that summer-fresh taste all year round. For this recipe you’ll need: Approximately 8 large tomatoes 3/4 cup vegetable oil 1/2 cup fresh parsley, chopped 2 Tablespoons sugar 1 Tablespoon garlic salt 1 Tablespoon Seasoned salt 1/4 cup fresh thyme 1/4-1/2 … Continue reading

Easy Saucy Chicken

Recently on the forums people were talking about quick meals with little preparation. Here’s one I think you’ll like. It takes only a little time to prep this meal, and then the oven does the rest. For this meal you’ll need: 4 boneless, skinless chicken breasts 1 (15 oz) can diced tomatoes with the juice ¼ red onion, diced 1 tsp. salt 1 tsp. dried oregano 1 tsp. dried parsley 1 tsp. allspice ½ tsp. black pepper Dash of olive oil To make this dish: Spray a 13×9-cooking dish with cooking spray. Place the chicken breasts in the dish. Sprinkle … Continue reading
