End of the Summer Picnic Dish—Kicked Up Pasta Salad

This evening I was reminded by our local TV meteorologist that we are losing more than two minutes of sunlight per day. So much for summer, right? Wrong. After hearing that the big ball of fire, which has fueled so many incredible summer memories for my family over the past few months, was slowly weaning us from its warmth and light I decided to take action. I called my playgroup moms and we set a date for an end of the summer picnic in the park. Next week we will round up the kids, make our favorite potluck dishes and … Continue reading

My Favorite Freebies at Dillons 12/12 – 12/18

There are some pretty good deals this week at Dillons (finally – it’s been a while!). I’m in Kansas City, and I’m not sure how widespread these deals are. Dillons is part of the Kroger company, so I imagine that some of the same deals can be found in Kroger stores in other parts of the nation, but the sale dates may vary. Please leave a comment with your location to tell me if you’re having luck with these deals too! Oh – by the way, Dillons doubles coupons. In my area, any coupon $.50 or below is doubled; and … Continue reading

My Mom’s Tuna Sandwiches

Mom’s make the best sandwiches, don’t they? I know mine does. Toast too. She butters every last inch of it just perfectly. This recipe actually comes from my grandma. My grandma made it for my mom and my mom made it for me and now I make it for my kids. It’s simple. It’s yummy, and it’s great for summer: To Make This Recipe You’ll Need: (all ingredient amounts are approximate) 2 cans tuna (your favorite brand in oil or water-the oil has more flavor, the water is healthier) 1 Cup lettuce 1 large tomato, diced 1/2 onion, diced 1/2 … Continue reading

Cooking: Cheaper Substitutions

There’s no reason families cannot eat well while also saving money. A few painless substitutions can make a real difference. Some people might turn their noses up at the thought of replacing ground beef with ground turkey. Even though it is healthier, and much cheaper than ground beef (especially if you buy frozen rolls of ground turkey), some people just don’t like it. That is unless you add it to a recipe where no one can tell the difference. Now, if you try to replace the beloved cheeseburger with ground turkey, you’re not going to get rave reviews. However, if … Continue reading

Tasty Turkey Noodle Casserole

I love turkey, but it seems that other than Thanksgiving or Christmas, I do not use it very much when cooking. I was delighted when I found this Rachael Ray recipe for Turkey Noodle Casserole online. You will need a half pound of extra wide egg noodles, extra-virgin olive oil, bacon (or turkey bacon), 1 1/3 pound of ground turkey breast, 1 pound of white mushrooms (sliced), one medium onion, dried thyme, dry white wine, chicken stock, heavy cream, 1/4 teaspoon of grated nutmeg, butter, grated Gruyere (about an 8-ounce brick), plain bread crumbs, and parsley leaves. In a large … Continue reading
