Here’s another great recipe developed by my dietitian friend. She enjoys cake just as much as the next girl, but is a whiz at cutting out extra calories and fat. This coffee cake is a great morning treat, but it’s delicious any time of the day! Top Chef Episode 8: Betty Crocker Rocks

Lesson learned in this week’s Top Chef episode: Even top chefs use cake mix. The contestants this week were told they had to cater a wedding for 100 people, including the cake – and the wedding was 16 hours away. They also had to shop at an all-night grocery store in one hour and settle for ingredients on hand like sub-par salmon. This is an old family recipe (so old, in fact, that the recipes reads: 1 egg, 2 if small (I guess it depends on what the chickens laid that day!), and also calls for sour milk (for which I have substituted buttermilk with terrific results).
