Chicken Enchilada Bake

“The ingredients sound strange but this is soooo good.” That quote above is from Kelly, one of my friends who is part of our dinner club (to learn more about starting a dinner club, click here). She added this recipe to our database some time ago, and it remains one of my favorites for jazzing up dinner. It is a casserole-type dish, which I love because of the convenience and the ease. I can prep much of it in the morning, while everyone else is asleep (when I get most of my kitchen work done), and it always turns out … Continue reading

Reuben Casserole

My husband loves Reuben sandwiches. When we first married, that is one of the few dinners he specifically asked me to make for him. If you have never had a Reuben sandwich, it is a grilled sandwich that is corned beef, sauerkraut, Swiss cheese, and Russian dressing on rye or pumpernickel bread. The origins of the Reuben sandwich are disputed. Some think a grocer in Omaha, Nebraska by the name of Reuben Kulakofsky invented the sandwich around the 1920s/1930s. However, the family of Arnold Reuben claims he invented it in New York City in 1914. No matter who created it, … Continue reading

Two Easy One-Dish Meals

If you are the parent of a toddler like I am, you know how difficult it can be to cook dinner while your child is running around the house. Or worse than that, while your child is howling in the other room because you left her alone with her toys. Additionally, it is hard to figure out what they will actually eat! Here are a couple of recipes that I have found are fairly easy to make and my daughter loves them. Easy Bacon Cheese Turkey-burger Mac 1 12 oz pkg macaroni & cheese with sauce 1 ¼ cups water … Continue reading

Ham in a Crock Pot and Leftovers Recipe

When I first heard this recipe, if you can call it that, I thought that it couldn’t possibly be any good. See if you have the same reaction: Ham + Cream of Mushroom Soup + Crock pot = ham and gravy. I tend to avoid Cream of Mushroom Cooking, as my foodie friend calls it, but this has seriously become one of my favorite Sunday meals for the family. I’m even going to make this on Easter Sunday so I can concentrate on the side dishes and dessert. The ham stays juicy and the gravy is just right. Give it … Continue reading

Tasty Turkey Noodle Casserole

I love turkey, but it seems that other than Thanksgiving or Christmas, I do not use it very much when cooking. I was delighted when I found this Rachael Ray recipe for Turkey Noodle Casserole online. In a large … Continue reading

A Romantic Valentine’s Day Recipe

Valentine’s Day used to be a great excuse to receive flowers, eat chocolates, and visit your favorite restaurant. Now it means chasing around a busy 18 month old – just like every other day. Eating out is nearly impossible, so this year, I decided to cook a romantic dinner at home – for both the men in my life. I have decided I will cook a Shrimp, Chicken, and Artichoke casserole with a Bechamel sauce, although my son may choose to eat SpaghettiOs. Your shopping list will be 8 ounces of cooked and diced chicken breast, 1/2 pound of baby … Continue reading
