Olive Garden’s Chicken & Sausage Mixed Grill

If you have been reading my food blogs (and if you haven’t, why not?), you know that from time to time, I post an Olive Garden recipe because we do not have one near us. Here is the latest installment – a delicious Chicken & Sausage Mixed Grill. I cannot wait to try this one! For this recipe, you will need two pounds of boneless skinless chicken breasts, one pound of Italian sausage, colavita pepper oil, chopped fresh rosemary, fresh lemon juice, salt, bay leaves, garlic cloves (pressed), and cherry tomatoes. You will also need a bag of bamboo skewers. … Continue reading

Marinated Grilled Mushrooms

For the longest time, I would not eat mushrooms. I do not know that I had ever tried them and not enjoyed them, I think it was just a case of I would not even try them. Then one night, I went to one of my favorite barbecue restaurants, Gridley’s, with my best friend and her husband. They had an appetizer of marinated mushrooms and after trying it, I immediately fell in love with mushrooms and now love to find different recipes for marinated mushrooms. The recipe for the mushrooms at Gridley’s is very easy. In a skillet, add two … Continue reading

North Carolina-Style Pulled Pork

I will be the first to admit that I am a bit of a barbecue snob. When you are raised in Memphis, home of the world’s best barbecue, it is hard to move other places and enjoy their barbecue. Different areas of the country have very different ideas on what exactly to barbecue (pork or beef) and how to barbecue it. I’ve been disappointed with barbecue I’ve had everywhere outside of Memphis with the exception of North Carolina. It is pork (which is important to me – Memphis barbecue is always pork). For this recipe, you will need a pork … Continue reading

Grilling Tips

This holiday weekend, many people will be grilling out. Here are some tips you may or may not know about grilling. When you turn your meats, use a tong instead of a fork. If you use a fork to puncture the meat, the natural juices can escape, leaving you with dried out meat that is tough. For the same reason, you should never press hamburger patties flat with a spatula. If you have ever done that, you have probably noticed the juices leaking out. Also, do not salt your meat before putting it on the grill or while cooking it. … Continue reading

Outdoor Entertaining: Grilling

Do you enjoy cooking out? Many people do and hosting a barbeque or a picnic is a great way to enjoy time with family and friends. Grilled food is often a favorite at such gatherings, and you too can become a grilling expert. Start with the placement of the grill. It should be close enough to the seating area that you can still visit with your guests, but it should be far enough away and upwind, so that the smoke does not bother your guests. Also, adjust recipes for the grill. The grill, even a gas grill with a temperature … Continue reading

Grilled Asparagus

Grilled Asparagus Writing about grilled artichokes yesterday made me think about my next-favorite grilled vegetable, asparagus. I’d had grilled asparagus at restaurants but never tried it at home, because I figured the restaurants must have special grills with the grates really close together (how else would you prevent the asparagus from falling in between?) and the patience to turn each little stalk as it roasted. Then last year I learned a trick that was one of those Duh! moments. To efficiently grill asparagus, skewer them like so: Skewer the bottom third of five or six spears with a little space between … Continue reading

Grilled Artichokes

My kids and I love artichokes (the hubby is not a fan so we hog out on them when he is out of town), and by far they are best when they are grilled. Here’s how I like to prepare them, grilled on a barbecue. If you don’t want to break out the grill, you can get the same effect with a good frying pan, although you won’t get that smoky barbecue flavor. A cast-iron skillet is best, but I’ve also used my pancake griddle. Cut the stem off the artichoke, then cut artichoke in half. Cut out the furry … Continue reading
