Autumn Desserts: Pairing Apples with Pears

This next recipe is an incredibly delicious way to serve apples and pears in a dessert that completely captures the essence of autumn. Apple Pear Pie is easy to prepare; it basically follows a traditional apple pie recipe save for the addition of fresh pears. If you are looking for a clever way to get your kids to eat their daily serving of fruits you must try this pie. APPLE PEAR PIE Ingredients: 4 apples peeled, cored and sliced 4 pears peeled, cored and sliced 1/2 cup brown sugar 1/4 cup granulated sugar 1/4 cup all-purpose flour 1 teaspoon ground … Continue reading

Fall Treats: Combining Chocolate with Pumpkin

You can’t go wrong when chocolate is in the mix. (At least in my family.) Whether you are adding chocolate chips to pumpkin pancakes or perking up an ordinary pumpkin muffin with swirls of chocolate, nothing beats the seasonal combination of sweet and sweeter. However, if you want to take the combo to an entirely new level consider the following recipe for Chocolate Pumpkin Pie. I tried my first piece last Thanksgiving. A friend of mine made it, though she didn’t create the recipe (she got it from a friend of a friend). If I knew who to thank for … Continue reading

Tantalizing Tropical Treat

Recently, I posted recipes featuring popular summer fruits including peaches, watermelon and strawberries. All are abundant this time of year and each has its own uniquely delicious flavor. Still, for me summer is just not summer without making at least one guava dish. I grew up on the Big Island of Hawaii where tropical fruits such as guava and lilikoi can be found in practically every backyard. We had a guava tree in our yard (actually, it’s still there and still bearing fruit) and my brothers would often help my grandfather pick the juicy round fruit with the light pink … Continue reading

Kids in the Kitchen: Sweet and Simple Strawberry Treats

Thank goodness for strawberries. When she was a baby the sweet red fruit was one of the only all-natural snacks my young daughter would willingly devour. Three years later strawberries are still on the top of her “Favorite Foods” list and being able to pick our own at a local farm has become an annual family tradition. We headed out on our latest strawberry picking adventure a couple of weeks ago and per usual it was… well, eventful (as are most outings with a preschooler). This year the crop was plumper and juicer than ever. We picked 10 pounds worth … Continue reading

My Husband’s Favorite Dessert: Key Lime Pie

Dads deserve the best on Father’s Day for all they do. While many women are going out of their way to buy tools, ties and t-shirts, I’m going out of my way to teach my kids how to squeeze limes and make whipped cream from scratch. Truth be told, my husband’s favorite dessert is key lime pie. So I’ve mastered the preparation. And yes, you have to squeeze the limes fresh. And yes, they have to be Key limes. Store bought juice will be easier, but it will also yield a noticeable difference in the taste of the finished product. … Continue reading

Hawaiian Style Thanksgiving Dishes

No, you don’t have to live in Hawaii to create the following recipes. I selected ones that included ingredients that are readily available at markets on “the mainland.” For those of you who do not read my regular blogs (Valorie has been kind enough to allow me to guest blog here) I was born and raised in Hawaii, but left the island paradise nearly two decades ago to attend college in Wisconsin (don’t ask)… and the rest, as they say, is history. However, no matter where I spend Thanksgiving I like to include a bit of home into my feast. … Continue reading

Low Calorie Holiday Pies

No holiday season would be complete without rich, delicious pie. I remember my grandmother used to make the most incredible pecan pie for Thanksgiving and then at Christmas time, we had cherry and blackberry pie, a family tradition. Fresh out of the oven with a dollop of ice cream was enough to put a smile on everyone’s face. While we all love sweets, especially during the holidays, we hate the calories. For this reason, I wanted to share a couple of my favorite pie recipes but ones that are low calorie. This way, you can “have your pie and eat … Continue reading

Australian Meat Pie

I am feeling a bit international today with my recipes, however, this one is definitely not for vegetarians! For this recipe, you will need 1 1/2 pound of minced steak, soy sauce, beef stock cubes, salt, pepper, nutmeg, flour, eggs, and one package of puff pastry. To make the filling, place 1 1/2 pounds of minced steak in a skillet over low heat. Let this cook until the meat is brown. Drain the fat from the skillet and add 1 1/2 cup of water. Crumble up 2 beef stock cubes and stir well. Add a pinch of nutmeg and salt … Continue reading

Key Lime Pie

With St. Patrick’s Day coming up, you might be in the mood for something green. How about the best key lime pie you’ve ever tasted? A tall order, sure, but I’m confident this recipe will have you coming back for more. Fair warning: this recipe is not for the faint of heart. It involves squeezing tiny little key limes to get their juice and grating their little tiny skins to get some zest. I’ve had friends roll their eyes while I’m making this (“You can buy key lime juice in a bottle,” says one. “You can buy a key lime … Continue reading
